Every batch starts as green coffee, sourced by region, altitude and process — never a mystery blend. We check moisture and density before it ever sees heat.
The drum comes up to temperature slow and steady, so beans heat evenly instead of scorching on the outside before the inside catches up.
Sugars caramelise and the beans crack audibly — the Maillard reaction doing its work. This is where real flavour starts forming.
The minutes after first crack decide everything: pulled early for brightness and acidity, or run longer for body and sweetness.
Beans are cooled fast to lock the roast in, then rested for a few days before we let them ship. Coffee needs to breathe before it's ready to brew.

We buy coffee we can name the farm, altitude and process for. If we can't tell you where it came from, we don't sell it.
